THIS is not just one for the vegetarians out there, I have done this dish at the last couple of catering jobs we have done, it did start out as a vegetarian option, but was proving so popular that most of the carnivores decided to tuck in as well.
It is a lighter version as it uses creme fraiche instead of soured cream which is a much more traditional ingredient in stroganoffs, but believe me the great taste is in no way impaired by this.See the full content of this document
